She had me at avocado

Last week I stumbled across a lovely blog called Adrienn eats.  Adrienn writes about eating, cooking, and the healing effects that food can have on your body.  I found her while hunting down ideas on what to do with the bi-jillion tomatoes that are coming out of our garden.  And wow, does she deliver.

But what really caught my eye was a super simple recipe for Chilled Avocado Soup.  She had me at avocado.

Chilled avocado soup
2 servings
1 avocado
1 c ice water (with ice)
juice from 1 lime
1 tsp ground cumin
1 tsp red pepper flakes
1/4 c cilantro
1 tbsp olive oil

Blend all the ingredients and garnish with cilantro. Season with sea salt and pepper.
